Black Bean Brownies

Ingredients
- 1 16 oz. can black beans, drained and rinsed
- 2 eggs
- 11 Medjool dates pitted
- ½ cup applesauce unsweetened
- 1 tsp. espresso powder (or ½ tsp. ground espresso)
- 1 tbsp. vanilla
- ½ cup cocoa powder
- ½ tsp. baking soda
- ¼ tsp. cinnamon
- ½ cup semisweet chocolate chips
DIRECTIONS
- Preheat oven to 350 degrees.
- Line 9-by-9-inch dish with parchment paper.
- In the blender, add beans, eggs, dates, applesauce, espresso powder, vanilla, salt and cinnamon.
- Mix until fully blended and smooth.
- Add ¼ cup chocolate chips and mix.
- Pour batter into dish ensuring it’s level.
- Add ¼ cup chocolate chips over the top and bake for 35 minutes.
- Remove from oven and let cool.
- Once slightly cooled, lift parchment paper and place on wire cooling rack.
- Cool completely, then cut into squares.
