Black Bean Brownies

Ingredients

  • 1 16 oz. can black beans, drained and  rinsed
  • 2 eggs
  • 11 Medjool dates pitted
  • ½ cup applesauce unsweetened
  • 1 tsp. espresso powder (or ½ tsp.  ground espresso)
  • 1 tbsp. vanilla
  • ½ cup cocoa powder
  • ½ tsp. baking soda
  • ¼ tsp. cinnamon
  • ½ cup semisweet chocolate chips

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Line 9-by-9-inch dish with parchment paper.
  3. In the blender, add beans, eggs, dates, applesauce, espresso powder, vanilla, salt and cinnamon.
  4. Mix until fully blended and smooth.
  5. Add ¼ cup chocolate chips and mix.
  6. Pour batter into dish ensuring it’s level.
  7. Add ¼ cup chocolate chips over the top and bake for 35 minutes.
  8. Remove from oven and let cool.
  9. Once slightly cooled, lift parchment paper and place on wire cooling rack.
  10. Cool completely, then cut into squares.
