2nd Place: Pecan Muffins for Passover

This recipe won 2nd place in the Jewish Light 2011 Passover dessert recipe contest.
Ingredients:
1 cup light brown sugar
¼ cup matzah meal
1 cup finely crushed pecans
10 tbsp. butter
2 eggs beaten
Directions:
Preheat oven to 350 degrees
Grease and flour (dust with matzah cake meal) a muffin pan
In a medium bowl, combine all ingredients.
Spoon into mini-muffin tins, 2/3 full
Bake 20-25 minutes.
