Ricotta Cheese Latkes

Ingredients:

10 ounces, (2 generous cups) ricotta cheese 

(I used the whole milk version)

2 eggs

2 tablespoons melted butter

2 tablespoons fresh squeezed orange juice

1 1/2  teaspoons grated orange zest

1/2 teaspoon orange liqueur, vanilla extract, or rum (optional)

1/2 cup all-purpose flour

1-2 tbsp. sugar

1/2 teaspoon salt

1/2 teaspoon cinnamon

Olive oil for frying

Powdered sugar, for garnishing

Fresh orange slices, for garnishing

Jam or honey, for topping (optional)

Directions:

Whisk together ricotta cheese, eggs, melted butter, orange juice, orange zest, and other optional flavoring in a medium bowl.  Set aside. 

 In a small bowl, whisk together flour, sugar, salt, and cinnamon. Pour dry ingredients on top of wet ingredients and stir gently to combine. 

 Heat 1-2 tablespoon olive oil over medium heat in a skillet.  Spoon a full ladleful of batter for each latke onto hot skillet. Fry 1- 1 1/2 minutes, or until underside has lightly browned.  Flip latkes and fry for another minute until just lightly browned.

 Divide latkes among four plates, sprinkle with powdered sugar, and garnish with orange slices.  Makes 4 servings.
