Passover Date Nut Bars

Ingredients for crust:
1 cup cake meal
¼ cup ground walnuts
1/3 cup sugar
½ cup room temperature butter
Ingredients for filling:
1/3 cup packed light brown sugar
1/3 cup white sugar
2 beaten eggs
1 tsp. vanilla
2 tbsps. cake meal
1 tsp. baking powder
½ tsp. salt
1 cup chopped walnuts
8 oz. chopped dates*
Directions for crust:
1. Preheat oven to 350 degrees. Spray non-stick 9-inch square pan. Set aside.
2. Blend all ingredients with a pastry cutter or two knives to fine crumbs. Pack onto bottom of prepared pan spreading evenly.
3. 3. Bake for 20 minutes. Edges should be light brown
Directions for filling:
1. Combine sugars, eggs and vanilla until well beaten.
2. Add cake meal, baking powder and salt.
3. Add nuts and dates last.
4. Pour mixture over hot pastry layer.
5. Bake for 20 minutes or until cake tester comes out clean.
6. Cool for 20 minutes and sprinkle with powdered sugar.
7. Cut into bars.
Note*: If using fresh dates, sprinkle and toss with 1 tbsp. sugar.
