Cottage Cheese Latkes

Ingredients:
2 large eggs
2/3 cup milk (may substitute buttermilk)
2/3 cup cottage cheese
1 teaspoon grated orange zest
1 tablespoon fresh squeezed orange juice
1 tablespoon melted butter
1 cup all-purpose flour
1/2 tablespoon sugar or honey
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
Olive oil for frying
Powdered sugar, for garnish
Fresh orange slices, for garnish
Jam or honey for topping (optional)
Directions:
Whisk together eggs, milk, cottage cheese, orange zest, orange juice, and melted butter in a medium bowl.
Whisk together flour, sugar, salt, and cinnamon in a small bowl. Pour dry ingredients over wet ingredients and fold together with a wooden spoon just until combined. Do not over mix.
Heat 1-2 tablespoons olive oil in a skillet over medium heat. Drop 2-3 tablespoons batter per latke in hot skillet. Fry for 1-1 1/2 minutes before turning over. Fry an additional 30-45 seconds, or until latkes are golden brown.
Place 3 latkes on each plate, sprinkle them with powdered sugar, and garnish with orange slices. Makes 4 servings.
