Sauces

(To be used for spooning over roasted vegetables, fish, chicken or meat.) 

Combine all ingredients for each sauce together in a food processor or blender and process to saucy consistency.

Charmoula Sauce

  • 1/2 cup coarsely chopped fresh cilantro
  • 1/2 cup coarsely chopped fresh flat-leaf parsley
  • 5 garlic cloves, coarsely chopped
  • 1/3 cup fresh lemon juice
  • 2 teaspoons sweet paprika
  • 2 teaspoons salt
  • 1 1/2 teaspoons ground cumin
  • 1/4 teaspoon cayenne
  • 1/2 cup olive oil

Almond Chimichurri Sauce

  • 1 cup whole blanched almonds, roasted
  • 1 cup extra virgin olive oil
  • 1/2 c. packed fresh parsley leaves
  • 1/2 c. packed fresh cilantro leaves and tender stems
  • 5-6 tbsp. freshly squeezed lemon juice
  • 2 tbsp. capers, rinsed
  • 2 medium garlic cloves, peeled and minced
  • 1 1/2 tsp. coarse kosher salt, plus more to taste
  • 1/2-3/4 tsp. crushed red pepper flakes, or to taste
