Passover Chocolate Chip Mandel Bread

Ingredients:
3 eggs
3/4 cup sugar
3/4 cup vegetable oil
Pinch salt
1 1/2 cups matzo cake meal
1/4 cups potato starch
1/2 – 1 cup mini chocolate chips
Directions:
1. Preheat oven to 350 degrees.
2. Beat eggs and sugar until light and fluffy.
3. Add oil, mix well.
4. Blend in salt, cake meal, potato starch and chocolate chips.
5. Rest 20 minutes. (This step is most important in allowing the logs to be formed in the next step. The dough becomes very easy to handle if allowed to rest properly.)
6. Arrange in 2 strips on cookie sheet lined with silicone baking sheet (or use greased cookie sheet).
7. Bake 35-45 minutes.
Let cool for 5 minutes and slice. Let cool. Freezes well. Can double recipe.
