Nate’s Kosher Deli will officially open on Thursday, August 8, initially offering only kosher butcher service. Chicken, beef, and lamb will be cut to order and available pre-packaged. The business at 10405 Old Olive Street Road is working under the supervision of the Vaad Hoeir of St. Louis.
On Wednesday, August 13, after Tish B’av ends, Nate’s will add deli take-out. A Shabbos menu is also planned. The take-out menu beginning next week will be limited to eight items, according to owner-operator Avi Rosenberg.
“I’ll have four hot items and four cold items,” Rosenberg said. “The hot items will include the killer pastrami sandwich, a Reuben sandwich, a brisket sandwich and a corned beef sandwich.”
The pastrami, which will be prepared using the original Kohn’s recipe, is a labor-intensive dish, as is corned beef.
“There’s more time that goes into making those because there’s pickling,” Rosenberg said. “You have to let it marinate and there are other things that goe into it. And then, it tastes amazing.”
The Shabbos takeout menu is still a work in progress, Rosenberg said. He will begin by offering a menu similar to Kohn’s, but using some of his own recipes.
“I have a chef coming in, too, and hopefully after the summer, I’m going to change things up a little bit,” he said.
Rosenberg said he enjoys the food industry and restaurant business, despite its long hours and stress. He’s happy to provide an important asset for the St. Louis Jewish community.
“I think people are positive about it,” he said. “I will be solving an issue, and my goal is to be a gourmet butcher shop that’s still reasonably priced, and eventually a nice place that you can sit down and take a client to eat. I want to provide good quality and good food. That’s my focus.”
In addition to being in charge of the kitchen and butchery, Rosenberg will be the counterman and face of Nate’s Kosher Deli. He will be assisted by his wife, St. Louis native and social media fashion expert Esther Santer. The deli is named for Santer and Rosenberg’s three-year-old son Nate.
The business will temporarily operate out of the former Kohn’s Kosher Meat and Deli building. Eventually, Rosenberg will relocate after he identifies a suitable space with commercial kitchen essentials like a walk-in cooler. Nate’s will not have a dry-goods section or bakery, so a sizable portion of the Kohn’s building will be unused.
Nate’s hours of operation will be: Sunday 10 a.m. to 5 p.m., Monday through Thursday, 10 a.m. to 7 p.m. and Friday, 8 a.m. to 4 p.m.
