Sweet Potato and Zucchini Latkes

Prep time: 10 minutes; cooking time: 5-10 minutes; makes 6-8 latkes.

Ingredients

  • 1 large zucchini, shredded (about 1 cup)
  • 1 sweet potato, peeled and shredded (about 1 cup)
  • 2 eggs, lightly beaten
  • 1 teaspoon kosher salt, more to taste
  • ½ teaspoon black pepper
  • ½ cup flour
  • 2 tablespoons olive oil

Directions

  1. Squeeze excess water from grated zucchini; do the same with grated sweet potato.
  2. Mix zucchini, sweet potato, eggs, salt, pepper and flour. Mix until well combined.
  3. Heat olive oil in a large skillet over medium heat.
  4. Drop about ¼ cup of mixture into skillet, press gently to form a flat latke, and cook until golden brown, approximately two to three minutes per side.
  5. Place latkes on paper towels to drain any excess oil. Sprinkle with salt. Serve as is or with applesauce or sour cream.
