Sweet Potato and Zucchini Latkes

Prep time: 10 minutes; cooking time: 5-10 minutes; makes 6-8 latkes.
Ingredients
- 1 large zucchini, shredded (about 1 cup)
- 1 sweet potato, peeled and shredded (about 1 cup)
- 2 eggs, lightly beaten
- 1 teaspoon kosher salt, more to taste
- ½ teaspoon black pepper
- ½ cup flour
- 2 tablespoons olive oil
Directions
- Squeeze excess water from grated zucchini; do the same with grated sweet potato.
- Mix zucchini, sweet potato, eggs, salt, pepper and flour. Mix until well combined.
- Heat olive oil in a large skillet over medium heat.
- Drop about ¼ cup of mixture into skillet, press gently to form a flat latke, and cook until golden brown, approximately two to three minutes per side.
- Place latkes on paper towels to drain any excess oil. Sprinkle with salt. Serve as is or with applesauce or sour cream.
