Tomato Sauce for Gnocchi

Ingredients

2 – 3 tablespoons extra-virgin olive oil or other cooking oil

1/2 cup chopped onion

1 – 2 cloves of garlic, finely chopped

1/4 cup of parsley, chopped

1 bay leaf

26-oz jar of crushed or stewed tomatoes

1 small can tomato paste

Directions

Heat oil in saute pan, add onion and garlic and cook on low heat until translucent

Add parsley, bay leaf, tomatoes and tomato paste

Bring to a low boil and then turn heat down and simmer for 20 – 30 minutes.
