Refreshing Yogurt Dip with Shredded Cucumber and Mint

(Must’o Chiar) “This dish is probably the most popular Persian dairy dip there is,” Reyna says. “It is fantastic with potato chips. It is very low fat and so healthy (well, as long as you don’t eat a whole bag of potato chips with it). My husband and I love eating it for a light, informal dinner.
“I am sure you have probably been to a spa, and if you haven’t, please make it a point to visit one soon and pamper yourself a little. Any great spa will often have a whirlpool, and any decent whirlpool will have a little bowl filled with finely sliced cucumber for you to place over your eyes while indulging in the swirling warm waters. Did you ever wonder why? Why not offer sliced carrots … after all, aren’t those good for the eyes?
“Well, the reason is because cucumbers have two compounds, ascorbic acid and caffeic acid, which prevent water retention, hence reducing swelling. Not only that, but since cucumbers are mostly water, they are also a great source of hydration. Their skin contains silica, potassium, magnesium and a ton of fiber. Hey, after all that, I think I am putting some on my eyes and also might eat a few!”
Ingredients
1 large English cucumber, peeled and shredded
½ cup onion, finely chopped (1 small onion)
1½ cups low-fat plain yogurt
1 tablespoon dried mint
½ teaspoon pepper
1 teaspoon salt
Directions
In a medium bowl, combine all ingredients.
Serve in a bowl and decorate with fresh or dried mint. This dish is absolutely delicious accompanied by potato chips.
