Pineapple Upside-Down Kugel

Ingredients:

4 Tbsp butter, melted

1/2 cup light brown sugar

4 canned pineapple rings, drained

5 maraschino cherries

2 eggs

1/4 cup sugar

1/2 tsp salt

1/2 tsp cinnamon

1 Tbsp lemon juice

10 ounces wide egg noodles

1 cup finely cut dried apricots (or other dried fruit, if preferred)

1/2 cup chopped pecans

Directions:

Preheat oven to 350 degrees.

Spray an 8 inch square, glass dish with PAM. Sprinkle dish evenly with brown sugar. Place pineapple on top of sugar mixture. Place a maraschino cherry in the middle of each pineapple ring and in the middle of the pan.

In a mixing bowl, beat the eggs, butter, sugar, salt, cinnamon, and lemon juice until well mixed. Cook noodles as directed on package. Drain the noodles; stir in egg mixture. Add apricots and pecans and toss with a spoon. Pour entire mixture into the greased pan.

Bake at 350 degrees for 45 minutes, until golden brown. Loosen edges with a knife and invert over serving dish, so that pineapple is on the top. Beautiful!

Serves 9 (usually fewer, because everyone wants seconds!)
