Jewish bagel toast without the bagel

When you want a bagel with all the fixin’s but can’t get to the bagel store, make this Jewish bagel toast complete with cheese, lox and cucumbers.  We used goat cheese, which is a bit more nutritious than cream cheese.

INGREDIENTS

  • 1 slice whole wheat toast
  • 2 tablespoons soft goat cheese
  • 2 ounces lox
  • ½ Persian cucumber sliced lengthwise

PREPARATION

  1. Spread goat cheese on toast. Top with lox and sliced cucumbers.
