Bison Ribs


4 lbs. ribs

2 bay leaves

10 black peppercorns

4-6 large garlic cloves, peeled and crushed

Lemon pepper, to taste


Place ribs in a large pot and cover with water. Add bay leaves and peppercorns and parboil (low boil) ribs in water for 35 minutes.  

Remove ribs from water and transfer to a large platter. Rub both sides of ribs with crushed garlic and sprinkle with lemon pepper, to taste.

Preheat grill to medium-hot.

Place ribs on grill for 15 to 20 minutes.  

Preheat oven to 250 degrees.

Transfer ribs from grill to a shallow ovenproof pan. Brush ribs liberally with barbeque sauce.  Cover pan with a lid or heavy foil paper and place in the oven for about 45 minutes, until tender.

Makes 4-6 servings.
